Honoring the memory of his mother is what Valery Jean-Bart set out to do when he started his culinary enterprise 10 years ago. In the four years that Jean-Bart spent caring for his mother after she was diagnosed with breast cancer, they formed a tradition of spending every Sunday baking cheesecake together. Making the pivot from civil engineer to entrepreneur after his mother passed was a courageous step for Jean-Bart, one that would soon take off and evolve into Val’s Cheesecakes.
